Spinach Salad

Quick Spinach Salad Recipe:

Ingredients:

  • 2 cups fresh baby spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 2 tbsp toasted sunflower seeds or walnuts
  • Dressing: 2 tbsp olive oil, 1 tbsp balsamic vinegar, salt & pepper to taste

Instructions:

1 Place spinach in a large bowl.

2 Add tomatoes, onion, feta, and seeds.

3 whisk together olive oil, vinegar, salt, and pepper in a small bowl.

4 Drizzle the dressing over the salad and toss gently.

5 Serve fresh.
