Ingredients:
For the muffins:
- 150g all-purpose flour
- 50g cricket flour
- 50g cocoa powder (unsweetened)
- 150g brown sugar (or coconut sugar)
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 2 large eggs
- 150ml milk (dairy or plant-based)
- 100ml melted butter or coconut oil
- 1 tsp vanilla extract
- 100g dark chocolate chips (70%)
- Optional: 2 tbsp rolled oats or crushed nuts for topping
Instructions:
Mix the batter:
In a large bowl, whisk together all-purpose flour, cricket flour, cocoa powder, baking powder, baking soda, salt, and sugar.
In a separate bowl, beat the eggs, then add milk, melted butter, and vanilla extract. Combine the wet and dry ingredients just until smooth — do not overmix. Fold in chocolate chips.
Fill the molds:
Line a muffin tin with paper cases. Divide the batter evenly among 12 cups, filling each about ¾ full. Sprinkle oats or nuts on top if desired.
Bake:
Preheat the oven to 180°C (350°F). Bake for 20–25 minutes, or until a toothpick inserted in the center comes out mostly clean. Let cool in the pan for 5 minutes, then transfer to a rack.

Serving ideas:
