Cricket-Powered Ladyfingers – Light, Sweet & Surprisingly Sustainable – the future-forward treat
Airy, delicate ladyfinger biscuits with a subtle nutty flavor and a protein boost from cricket flour. Perfect for tiramisu, trifles, or as a stand-alone snack.

Cooking time: 10–12 minutes
Serves: Approximately 25 ladyfingers

Ingredients:

  • 70g all-purpose flour
  • 30g cricket flour
  • 3 large eggs (room temperature)
  • 90g granulated sugar
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Powdered sugar for dusting

Instructions:

  1. Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.
  2. Separate the eggs: Place yolks in one bowl, whites in another.
  3. Whisk the yolks with half the sugar (45g) and the vanilla extract until pale and thick.
  4. In a clean bowl, beat the egg whites with the salt until soft peaks form. Gradually add the remaining sugar (45g) and continue whipping until stiff, glossy peaks appear.
  5. Gently fold the egg yolk mixture into the whipped egg whites, being careful not to deflate.
  6. Sift together the all-purpose flour and cricket flour. Carefully fold the dry ingredients into the egg mixture in batches until just combined.
  7. Transfer the batter to a piping bag with a plain round tip. Pipe 8–10 cm long strips onto the prepared tray, leaving space between each.
  8. Dust generously with powdered sugar for a light crust.
  9. Bake for 10–12 minutes, until firm and lightly golden.
  10. Let cool completely on a wire rack before using or storing.
